Chettinad kara kuzhambu recipe is very famous in all over Tamil Nadu. Different types of vegetables are used to prepare this kara kuzhambu. Here I have stated the exact method for the preparation of Kara kuzhambu chettinad style.

Chettinad kathirikai kara kuzhambu Ingredients

Tender Brinjal ( Kathirikai) -  6

Tamarind – lemon sized

Chopped Onion – 1 cup

Garlic – 5

Fenugreek seeds - 1tsp

Jeera – 1tsp

Pepper – 1tsp

Chilli powder – 2tsp

Curry leaves as required

Mustard – 1tsp

Oil as per taste

Salt as required

Coconut - 3tsp

 

How to make chettinad kara kuzhambu Recipe

Take a pan and fry jeera, pepper and coconut by adding little oil.

Grind the fried ingredients nicely without adding water.

Add warm water and extract juice from tamarind.

Cut the brinjal and put in the water to avoid sour taste.

Take a pan and add oil, then add the mustard and fenugreek seed.

Add curry leaves, garlic and small onion fry well until onion becomes golden brown.

Then add the brinjal, fry well oil until it becomes brown.

Add the ground ingredients, chilli powder, salt and tamarind juice.

Let it to boil for some time, the delicious chettinad kara kuzhambu recipe is ready to taste.

Note: you can prepare this recipe like gravy by adding more kathirikai and this is called chettinad kara kuzhambu curry. This is the best side dish for rice and dosa.

Kathirikai Sadam Brinjal Rice Ingredients

Cooked rice – 1 cup

Kathirikai (tender) chopped – 4

Mustard – 1tsp

Curry leaves

Chilli powder - 1/2 tsp

Oil – as per taste

Salt – As required

 

Brinjal rice Masala ingredients and preparation

You can also use Readymade MTR Vangibath masala

Urad dal 1/2tsp

Fenugreek seeds – ½ tsp

Kadalai paruppu – 1/2tsp

Curry leaves – 1 stem

Jeera and pepper – 1tsp

Dry fry and grind the ingredients

 

How to make Kathirikai saddam

Take a pan and add oil, heat it and then add mustard, curry leaves.

Then add the chopped brinjal, fry for some time in sim flame

When it becomes golden brown add the chilli powder and ground masala.

Now add the cooked rice and salt with the fried brinjal.

Mix well and garnish with coriander leaves.

Brinjal rice or Kathirikai sadham is ready to taste 

 

Note: The coocked rice should be non sticky (like lemon rice) for the preparation of Kathirikai satham.
