How to Prepare Kathirikai Curry Recipe
Kathirikai Curry Recipe is called Kathirikai podi Curry in Tamil nadu villages. It is very tasty and best side dish for rice, dosa, and chapati.
Fry ginger, garlic, cinnamon, clove, coconut and groundnuts without adding oil (dry fry)
Grind the above dry fried Kathirikai Curry Recipe ingredients nicely by adding required water. Add required salt and mix well.
Wash and semi cut the brinjals (not cutting the bottom stem portion). I think you are familiar with this cut as you have prepared ennai kathirikai kulambu already.
Now stuff the ground masala in each brinjal and keep it for half an hour to the masala spreads the whole brinjal.
Take a pressure pan, add oil and sauté the mustard, followed by curry leaves and coriander leaves.
Then add the chopped onion, chillies and tomatoes. Fry the ingredients in medium flame until it becomes golden brown colour.
